Ingredients:
100 g of buckwheat flour Molino Filippini
50 g of rice flour
60 g of butter
50 g of brown sugar
1 egg
a pinch of cinnamon
Preparation
Mix the two flours and add the cold butter into small pieces. Knead the butter and flour with your hands until obtaining a sandy mixture. Add the ground brown sugar, a pinch of salt, and the eggs. Shape the compound into a ball and leave it in the fridge for 1/2 hour. Take it back, roll it out, and use molds to shape the cookies (about 20 cookies will come out). Bake for about 30 minutes at 180 °.
