Recipe method
Sorghum Salad Recipe
Rinse 160 g of sorghum and cook it in 320 ml of water for about 30 minutes. After cooking, let it cool down. Steam 1 bunch of asparagus and wash and cut 10 cherry tomatoes. Now toast 2 tablespoons of sesame in a pan with a pinch of salt and at the end of roasting add 1 pinch of thyme and 1 pinch of oregano. Coarsely blend the sesame and add extra virgin olive oil and use it to season the sorghum. Add the cherry tomatoes and the asparagus stalks cut into small rings. Saute the asparagus tips in a pan and add them to the cereal.
Sorghum Pot Pie Recipe:
Wash and cook 120 g of sorghum in 240 g of vegetable broth. Beat 2 eggs with 1 pinch of salt and 1 of pepper. Add 70 g of speck, 40 g of Parmigiano Reggiano, and 50 g of mozzarella. Mix everything together with the cooked sorghum, butter, and bread a pan, pour in the mixture, and cover it with breadcrumbs. Bake in a preheated oven at 180 ° C for about 45 minutes. Serve hot.
