Ingredients:
125 g of Organic Couscous 4 Legumes Molino Filippini
1 small cucumber
125 g of cooked chickpeas
100 g of feta
70 g of pitted Taggiasca olives
8-10 mint leaves
4 tablespoons of extra virgin olive oil
salt and pepper
Prepare the Cous Cous 4 Legumes Molino Filippini according to the instructions on the package and season it with 2 tablespoons of oil and a pinch of pepper. After shelling, transfer it to a bowl. Peel the cucumber and cut it into cubes. Break the feta into small pieces, wash the mint, and cut it into thin strips. Add all the prepared ingredients to the Cous Cous and mix well. Season with the remaining oil and serve it or keep it in the fridge for up to 20 minutes before serving. If you like, you can add a few wedges of datterino tomatoes or chopped dried tomatoes.
