Apple Strudel with Organic Teff Flour

For the dough:
250 g of Organic Whole Teff flour Molino Filippini
1 tablespoon of seed oil
1 egg
1 pinch of salt
100 ml of warm water
For the stuffing:
700 g of apples
80 g of raisins
60 g of walnuts
20 g of pine nuts
20 g of breadcrumbs
40 g of sugar
1 teaspoon of cinnamon
1 glass of water
1 pinch of salt
Place the flour in a bowl and pour little by little, mixing with a fork, the water, salt, and oil. When the dough begins to become more consistent, knead with your hands and work it until it is smooth and homogeneous. Then leave it to rest for about twenty minutes. In the meantime, cut the apples into thin slices, dissolve the sugar in the water in a pan and add all the other stuffing ingredients, cooking for about 10 minutes. Roll out the dough, place it on a sheet of baking paper and add the filling in the center; seal the strudel and make two or three holes on the surface, then bake at 180 degrees for about 45 minutes.
